Pumpkin Harvest Bread

This seasonal treat makes a great breakfast bread or hearty snack.






Ingredients
1 1/2 cups Sugar
1/2 cup
Olinda Ridge Olinda Gold extra virgin olive oil
2 eggs
1/3 cup water
7 1/2 oz pumpkin puree
1 tsp ground ginger
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
1 3/4 cup All-Purpose flour
1 tsp baking soda
3/4 tsp salt
1/4 tsp baking powder

Preparation
1. Pre-heat oven to 350 degrees and prepare a greased pan
2. In a bowl, whisk together sugar, olive oil, eggs, and water
3. Add pumpkin puree and spices
4. Stir in remaining dry ingredients*
5. Pour batter into prepared pan and bake 40-50 minutes

* You can also add 1/2 cup of your favorite chopped nuts (almond, walnut, pecans, macadamia, etc.) or chocolate chips.
